Balsamic Vinaigrette Reduction Replaces Ranch

Morning citrus fruit is a bright and beautiful way to begin the day.  Just the smell alone is worth waking up for.  Selections may include most any combination you have on hand or a  trip to a your local farmer market or grocery store for fresh natural nutrients. Pictured here are a few favorites, Pineapple, oranges joined by pear and more.

On this day I chose to give it a light toss of balsamic vinaigrette  reduction to get rid of excess ingredients found in most dressings helping keep processed sugar intake to an absolute minimum along with  preservatives and a long list of 
unpronounceable​ ingredients.

​Balsamic Vinegar Reduction may be found in specialty shops, markets, online and more, our favorites come from Modena Italy.

Options will include: Lavender, Blackberry/Ginger, Green Apple, Mango, Huckleberry & Traditional Aged.

Winter Menu Wonders

Ever wonder what in the world to do with all the colored squash? The extra oversized from  friends garden or the really cool mound displayed at the market. 

​We played around with the shredder and cooked up some "squash cakes" similar to crab cake, these play well to the vegetarian, or paleo to grab the extra nutrition in the color spectrum. ​

  • ​2 cups Grated/Shredded Squash...without seeds of course
  • ​Add 2 eggs
  • 1/2 Teas Herb combo of your favorites  to create; Basil, Chives,  Dill, Parsley, Italian Mix
  • 2 Minced Garlic Cloves
  • ​1/4 Teas Red Pepper Flakes
  • Stir and cook in coconut oil
  • ​Sprinkle with Sea Salt
  • ​Serve with Fresh Avocado, tomatoes or salsa

 REAL FOOD is not found in a cereal box! And just to emphasize the point even our puppies know boxed cereal is simply not fit for consumption...filled with sugar, colors, preservatives, and fluff that tastes ohhh so good but does absolutely nothing to nourish the living body of humans and pets. 

Its time to go through the cupboards...assess the value behind the doors, in the bags and boxes. What did you discover about yourself? How much was real food?    What clues are on the labels? Are the contents inside loaded with sugar ?  Be sure to review the ingredient list carefully. Chances are if you cant pronounce something, and the list is really long, best to avoid.

Natural Grocers

Traveling to commitments offers a very real snack adventure.  In the Pacific Northwest Natural Grocers has become a favorite stop to quench the thirst, grab some munchies, while staying on the healthier track. The brand is nationwide with a lovely selection of organic fruits and vegetables. We recently hit the trail from Spokane Washington where the selection slightly varies to Whitefish Montana and even has a beautiful demo classroom kitchen. 
We often search for a few specific ingredients to be included in our snacks, Turmeric, Ginger, Lemon, Sea Salt, Fresh Fruit, , raw nuts and something that may trigger personal growth or learning.

This visit a book nearly jumped off the shelf as I walked by called "The Myth of Stress" by Andrew Bernstein, his title focus  "Where Stress Really comes from and how to live a happier & healthier life."  The back cover includes praise comments by Mark Hyman M.D.; Aaron T beck MD, founder of Cognitive Therapy, Kathleen DesMaisons Ph.D author of "Potatoes Not Prozac".

Well, with many life challenges we all go through, who doesn't have stress in their daily life, I certainly am not exempt..so the book went in the bag and joined my lovely collection to enjoy more then once. Thank you; Natural Grocers for being a well rounded store.

Spiralilzing ..a New Pastime

How I love my newest discovery of spiralized zucchini and yellow squash. You cant help but notice how much easier your digestion process feels for the rest of the night. Its perfect for so many who need to find a Gluten Free GF "spaghetti" option. This gives multiple choice options for Vegetarian, Paleo, Keto, Gluten Free and more.  We used grass fed beef, creating a homemade marinara simmering with specifically selected herbs to reduce inflammation, improve mental clarity.. all that done through Real Food. 
There are many choices from basically a hand twist by "Veggetti", or hand crank from "Cuisinart" to the "Veggie Bullet", fully electric that spits out the circular spirals  literally in seconds. These are a few examples we tested and there are many more.

GF Lemon Zest Scones with Ancient Grains

Today while the snow fell…it was a great day to explore ancient grains filled with flavor and free from GMO changes, todays test.. a GF Scone Recipe that was delicious. We chose to have a bit of savory to join up with naturally light sugar free fruit preserves. nicely enhancing fresh ginger, shredded cheese and craisins.
​

2 ¾ cups flour (Premium Gold) GF Flour includes, Amaranth, Buckwheat and more.
​                                (All in 1 True Replacement for All-Purpose Flour)

½ cup Butter ( Coconut Oil option)
3 Teas Baking Power (aluminum free)
2 Tab Sugar 
1/3-1/2  cup Almond/Coconut milk
1/2 Teas Salt
½ cup Craisins
1 cup grated cheese (optional)
2 Eggs
¼ Fresh Grated Lemon Zest
1/8 cup Couscous
2 Teas Vanilla
1 Tab Fresh Minced Ginger
Dry ingredients – Mix lightly, and cut in butter; add fluid, do not overmix. Hand form.
Real Food comes in many naturally Gluten Free (GF) ingredients.  
The base recipe gives you lots of options to add or delete your ingredient list.
